	How do you know if it’s ripe? • When buying an avocado for immediate use, select fruit that yields to gentle pressure—if you’re planning to use it later in the week, look for firmness. • Color alone may not tell the whole story. While the skin of the popular Hass avocado will turn dark green or black when ripe, other varieties will retain their light-green color, even when ready to eat. • Avocado enthusiasts with unripened hard fruit need not despair. To speed the ripening process, simply place the fruit in an ordinary brown paper bag and store it at room temperature from two to five days. Including an apple in the bag accelerates the process even more. How do you deal with a wild avocado? • First, make sure your avocado is ripe. Cut the avocado lengthwise around the seed. Gently rotate the halves to separate them. • Take the half that contains the pit and remove it by sliding the tip of a spoon gently under the pit and scooping it out. • Peel the fruit by placing the cut side down and removing the skin with a knife or your fingers—it should slide off quite easily. You can also simply scoop out the avocado meat with a spoon. • Be sure to sprinkle all cut surfaces with lemon or lime juice or white vinegar to prevent them from turning brown.
