Yummy Fried Bananas
For a tasty treat, try frying up bananas instead of eating them raw.  Here’s how:
   -   Peel 4 bananas (you can add as many more as you like as long as the mixture holds out).
   -   Sprinkle both sides with lemon juice, and a little salt and pepper.
   -   Roll them in the flour from a yellow cake or muffin mix, then a beaten egg (use two beaten eggs if you’re making more), then breadcrumbs.  The flour and egg hold the breadcrumbs on the banana; the cake flour adds a little extra taste.
   -   Chill in the refrigerator for an hour.
   -   Heat oil in a frying pan, place bananas in the oil and cook on both sides until golden brown.
   -   Drain and serve.
These are delicious all by themselves, but you can add other things to double the pleasure such as other fresh fruit or compote, ice cream and/or chocolate sauce.

Plantain Lasagna
   -   2 large plantains
   -   1 large beefsteak tomato
   -   1/2 lb. skim milk mozzarella
   -   1 block tofu
   -   1 6-oz. can tomato sauce
   -   3 tablespoons wheat germ

1.   Peel and slice each plantain into three lengthwise sections.

2.   Place in bottom of baking pan.

3.   Slice tomato thinly, then cut slices in half.

4.   Place half of the tomato slices on top of plantains.

5.   Cut mozzarella slices over plantain and tomato slices.

6.   Drain tofu and mash with a fork.

7.   Layer this over other ingredients in pan.

8.   Pour tomato sauce over all.

9.   Top with remaining mozzarella and tomato slices.

10.   Sprinkle on wheat germ.
11.   Bake at 350 degrees for 35 minutes.

Serves two.

Yes i make bannana cakes using ripen bannanas, rice flour,or ground rice, self raising flour, baking powder, nutmeg ie grated,and handful of sugar into the blender u add the bannana with water u remove from blender into a bowl add and mix the other ingredients wrap in cling film for an hour in the refrigerator fry in any oil of your choice alternatively, bake in the oven for 1hr until brown and use a fork to check it inside ones its cooked there will be no suggy look on the fork Very tasty and healthy
