Storage and Usage

To Store Your Bananas
Keep your bananas on your kitchen counter clear of heat or sunlight, which will cause them to rapidly ripe, in a white plastic bag and they will stay fresh for many days.  Keeping them in a brown paper bag will hasten the ripening process also.  If the bag is open, it will go even quicker, or left open in sunlight is the quickest.  It is a good idea to keep your bananas separate from other fruit, as they will hasten the ripening of other fruit in their vicinity.

When I was a kid, it was thought that putting a banana in the refrigerator would ruin it, but this is not true.  It will slow down the ripening, thus allowing you to keep them longer.  The skin might turn brown, but this will not affect the sweetness of the banana once it returns to room temperature.

Yes, you can freeze bananas.  But like many fruits, the consistency won’t be the same when defrosted.  You can freeze them whole to use later for cooking or for blender recipes, like smoothies, energy as well as exotic party drinks.  Or freeze the fruit mashed in a plastic freezer bag or container, but add 1 teaspoon of citrus juice, like lemon juice, to the mashed bananas.  They should last for 3 months

How Do I Use Green Plantains?
If eating an unripe, green plantain sounds unappetizing to you, don’t worry.  It seems that the most effective ulcer treatment is a dried powder made from plantains called musapep.  If musapep is not available to you, check the supermarket for the most unripe plantains you can find and then cook them up.  They are just as effective fried or baked and taste much better than raw.
