Apples, cinnamon and honey all have virus-fighting abilities. This recipe combines them all in a sweet, tempting dessert that the kids (and everyone else!) will love.
-1 apple for each person, preferably McIntosh or Granny Smith -1 teaspoon of honey per serving -1/2 teaspoon of cinnamon per serving
1. Preheat oven to 375º F.
2. With a small, sharp knife, start piercing a whole, washed, unpeeled apple around the stem in a circle about one inch around. Carefully cut out the core, leaving about 1/2 to 1 inch at the bottom to hold in the filling.
3. Fill the center hole in the apple halfway with honey, then sprinkle about half a teaspoon of cinnamon over the honey.
4. Put the apples in a pan. (an 8 x 8-inch pan should hold about 4 apples)
5. Bake for about 30 minutes.
6. Take the cinnamon and honey along with you to the table in case you want to add a little more while you’re eating.
If you’re in a hurry, here’s my fast microwave version: Slice a whole apple into 4 to 6 parts by cutting all the way through from top to bottom with a long knife, keeping the stem at the center of your cut-first section. Then cut each piece lengthwise two more times. Remove the core and seeds from your slices with a small knife. Drizzle a fine stream of honey over all the pieces and then sprinkle with cinnamon. Lay peel-side down on a microwaveable plate. Cook on high for 1 to 2 minutes. As above, add more honey and cinnamon if desired. |
