Cayenne pepper often goes by the name “red pepper” and is sold in the form of a fine, red powder in the spice department of the supermarket. Cayenne is so hot, it is actually measured in heat units called HUs. The mild variety, usually sold as a spice, is about 32,000 to 40,000 HUs. Durkee™ and Spice Islands™ are two easily found brands. There are other varieties of cayenne that are much hotter, including the African variety that checks in at 100,000 HUs! You would have to go to a specialty store to find that one. Start with the milder variety, unless you can tolerate really hot food.
Fresh peppers such as jalapeño, habanero, chile, poblano, Scotch bonnet, and serrano can be found in the produce section of the supermarket. Each market carries different varieties, depending on the demand of their customers, so you may not find them all in one place.
