The Kinder, Gentler Pepper
Bell peppers, sometimes called sweet peppers, are the kinder, gentler members of the pepper family. They are not hot like chilies or jalapeños, but milder in flavor and commonly grown in more temperate climates than their spicy cousins.
I love to mix the different shades of green, orange, yellow and red peppers in fresh salads. And nothing can compare to peppers fried in a little olive oil until they are slightly burnt. Who would think that such a culinary classic could be so rich in healthful properties?
Bell peppers are nutritional powerhouses Bell peppers contain more vitamin C, ounce for ounce, than citrus fruits. They also contain vitamins A, B6, and folate. Red bell peppers contain more vitamin A than the green and yellow varieties. Peppers are also packed with cancer-fighting substances such as bioflavonoids, phenolic acids and plant sterols.
While fresh, raw peppers contain the most vitamins. Cooking does not lower the amount of nutrients by a significant amount, so go ahead and enjoy your sweet peppers any way you like them!
