	Carrots Introduction Properties and Uses Preparation Helpful Hints Healing Recipes
	A Healing Recipe with Carrots Roasty-Toasty Carrots - 2 pounds fresh organic carrots (about 9 medium carrots) - 2 tablespoons extra-virgin olive oil - 1/2 cup chopped onion - black pepper - 1 tablespoon chopped fresh thyme leaves - 1 tablespoon chopped fresh rosemary leaves or fresh dill - 1 orange, cut into wedges 1. Trim both ends of the carrots and peel. Cut large end in half, lengthwise and leave narrow ends whole. 2. Heat oil on high in large (12 to 13-inch) skillet. 3. Place carrots closely together in pan in single layer. Sprinkle with onion and pepper. 4. Cover and cook over medium-low heat, turning once halfway through, for 30 minutes or until fork-tender. 5. Sprinkle with herbs. Squeeze 3 or 4 wedges of orange over the top. 6. Serve hot with remaining orange wedges on the side.
