What’s Up, Doc?
No wonder Bugs Bunny is so peppy.  He is always munching on a tasty carrot. Carrots are a superb source of beta-carotene, which converts to vitamin A in the body, and potassium.  They are a great source of fiber.

Certain foods have antibacterial properties.  Carrots are one of them.  Natural antibacterial agents in food can destroy the kinds of bacteria that can cause illnesses such as strep throat or infections in injuries.  These foods disrupt the bacteria’s internal processes so they cannot multiply.

Purple carrots?
Carrots were originally different shades of purple. The yellow carrot is thought to be a mutation lacking in purple pigment.  Ancient Greeks and Romans used both the purple and yellow varieties for medicinal purposes.  Europeans are thought to have been the first to use carrots as a food during the Middle Ages. They cultivated the yellow-orange carrot, which replaced the purple varieties still grown in the Near East.

When the carrot was first introduced into France in the early Middle Ages, however, people ignored the edible root and grew it for its feathery leaves, which were used to decorate hairstyles, hats, and other items of female apparel!
