It never ceases to amaze me how many people push parsley aside, leaving it on their plate at the end of a meal. I guess they don’t realize that parsley is more than just a pretty garnish—it’s an effective breath freshener, too! Personally, I don’t like to take chances where hygiene is concerned; I make sure to chew up every bit of this handy little herb after I’m done eating.
Also, it’s loaded with nutrients everyone can benefit from. So stop ignoring that parsley sprig—eat it and keep healthy!
Parsley Is Full of Nutrients Parsley is brimming with nutrients, including vitamins A, B, C, K, calcium, iron, and potassium. It also contains bioflavonoids, and antioxidants such as monoterpenes, phthalides and poltacetylenes, all of which are substances that fight cancer.
In addition, it contains histidine, an amino acid that has been shown to inhibit tumor development.
Victory in Ancient Greece Parsley has one of the more colorful histories compared to other herbs. Do you remember seeing leafy crowns on the heads of statues of Greek warriors or athletes? The olive branch crowns are adorned with parsley leaves. The Greeks used parsley leaves for weddings and athletic games and even fed it to their horses before battle to increase the steed’s stamina and courage.
